Kappa-maki, a type of thin roll (hosomaki), was devised in the early Showa period (1930s~). This roll offers a refreshing taste with the crispness of cucumber and a hint of wasabi. The name is said to originate from the legend of the kappa, a mythical water-loving creature which loves cucumbers in Japanese folklore, or because the cross-section of the cucumber resembles the bowl on a kappa’s head.
