Obi-zuke

“Obi-zuke” refers to the practice of wrapping a strip of seaweed (nori) around the sushi rice (shari) and topping (neta) when forming sushi, in a way that resembles a belt, "obi" in Japanese. On the other hand, sushi that is completely surrounded by seaweed on all sides is called "gunkan-maki" (battleship roll).
