Buri is in its prime during winter, and is known for its rich, fatty flavour and firm texture. Fresh buri boasts a pronounced sweetness from its fat and offers a melt-in-your-mouth experience. The belly part, rich in fat, is referred to as "toro," similar to tuna. However, unlike tuna toro, buri toro has fat distributed throughout its reddish flesh, resulting in a less greasy texture. For those who find tuna toro too fatty, buri toro is a sushi topping worth trying.
