Kama-toro is a rare cut from the around the gills and cheek of the tuna, known for its exceptional flavour and texture. This part is highly marbled with fat, containing even more than regular toro, delivering a melt-in-the-mouth sensation, mild sweetness, and rich umami. It's a unique culinary experience, but due to its limited quantity, kama-toro is a scarce and precious delicacy.
