Kanpachi has pale pink flesh and is well-marbled with fat, yet it is not overly rich or strong in flavour. The flesh is firm and has a delightful crunchy texture. Kanpachi's prime season is during the warmer months as its spawning season is from spring to summer. It is closely related to buri (yellowtail).
In essence, buri and hamachi (a younger buri) are at their best in the colder months, while kanpachi is most delicious during the warmer months!
