Minced fatty tuna and scallion roll

Negitoro is made by finely chopping the fatty parts of tuna found on the underside of the skin, which is too sinewy for nigiri, together with scallions. It is a popular ingredient for gunkan-maki (battleship roll) or maki sushi (rolled sushi).
