
Toro
“Toro” refers to the fatty portion of tuna's belly. The name originates from the sensation of the fat melting smoothly ("toro") in your mouth. There are two types of toro: “ō-toro”(fatty tuna) and “chū-toro”(medium fatty tuna). O-toro is the section from the gills to the middle of the belly, while chu-toro refers to the area from the middle of the belly to the tail as well as the fatty portions of the back.
