
Zuke
“Zuke” means "marinate", and refers primarily to tuna that has been marinated in soy sauce and is also known as "zuke-maguro". This technique was developed as a way to preserve fish in times when refrigeration technology was not as advanced. Other ingredients like bonito, octopus, prawns, and shellfish can also be marinated. The marinade may also include sesame oil, chilli, garlic, and other seasonings.
